One Bowl Greek Salad
2T olive oil
1T red wine vinegar
1T fresh oregano leaves, finely sliced or chopped
1/8t fine grain sea salt
1/8t ground black pepper
1C grape tomatoes, cut in half
1C cucumber, cut in bite sized pieces
1/2C/4oz feta cheese, diced
1/2C kalamata olives, sliced in half
1 head romaine lettuce, sliced in fat ribbons
  1. In a medium sized bowl add the olive oil, wine vinegar, oregano, salt and pepper, whisk to combine. To the bowl add the cut tomatoes and cucumber, the diced feta and the sliced olives. Scoop down to the bottom of the bowl, lifting the dressing to coat all the salad ingredients, gently folding them together. Depending on the brand of feta cheese and personal preference add more salt if desired. Serve the One Bowl Greek Salad on a bed of sliced romaine.

  1. Gotta to love the salad season! What a gorgeous salad and very nice choice of ingredients and herbs. I wish my oregano plant thrived during the the winter. It dies out but comes back every year. Love adding fresh herbs to salads, vegetables and a variety of dishes.
